Miyazaki-jidori Sumibi-yaki Kuruma

They have Jitokko-jidori!? Wonderful!
Having a clear view of the kitchen sure is great! The charcoal aroma of Miyazaki-jidori sumibi-yaki, fit for a connoisseur! Just look at those flames!
The popular sumibi-yaki chicken thigh…grilled as if delicately wrapped in charcoal.
Chicken tataki. With the skin grilled to a crisp, the slightly seared thigh is cut julienne, topped with spring onion and grated ginger, and paired with our finest ponzu.
Chicken-namban. Best enjoyed with homemade tartar sauce!
Oooo, chicken-namban! Looks delicious!
Now that’s a lot of shochu!

The jidori (Japanese indigenous breed chicken) of Miyazaki Prefecture owe their fame to Governor Higashikokubaru, and “Jitokko-jidori” is definitely the best-known “brand name” among the lot. “Jitokko-jidori chickens are raised a full month longer than other chickens,” says Mr. Yamada, manager of the Marunouchi branch of Miyazaki-jidori Sumibi-yaki Kuruma. “This firms the meat and ensures a richer, more mature flavor.”
Kuruma, a popular evening destination and always crowded with local businessmen, is located on the first basement floor of the Tokia Building.
The specialty of the restaurant is definitely char-grilled Jitokko-jidori chicken. Customers unfamiliar with Miyazaki’s sumibi-yaki (charcoal grilling), and concerned about the reputed toughness of Miyazaki-style meat, often bombard us with questions,” laughs Mr. Yamada. For example, we’ll often hear something like, “Don’t you think this meat’s a bit too tough?!”
The chewiness of Jitokko-jidori is its best feature. It is often thought that this fleshy meat, which releases more and more flavor as it is chewed, is likely to be thought of as “tough” by those who don’t know any better. Grilling the meat to impress a crisp, charcoal aroma also adds smokiness to the flavor that takes some people a bit of time to get used to.
Even if that’s the case, Kuruma is blessed with a large number of devoted customers who love Miyazaki sumibi-yaki, and the shop suffers no shortage of advance reservations. Once you get used to eating Jitokko-jidori, you’ll stop worrying about the chewy texture and may even come to endear it. We really hope you’ll try Miyazaki Jitokko-jidori for yourself before passing judgment! And, as a true Kyushu-born eatery, an extensive line-up of shochu is offered, sure to satisfy even the most seasoned sake-connoisseur!
