Savor delicious eel in a tasteful Japanese atmosphere
The standard way to cook eel is to open it from the back, grill it, and then steam it (Kanto style), or to open it from the belly and grill it without steaming it (Kansai style), but "Unagi Kitao", which opened on July 17th, is a little different. They use young eels that have been raised in eel farms both in Japan and overseas for over a year, and are characterized by their tough skin while still having a flavor and texture close to that of natural eels.

It takes skill to grill the eel on the grill until it is crispy and fluffy while still retaining its delicious taste. "We use a technique called 'konashi', where the eel is opened, skewered, and then folded while grilling. The gelatin between the skin and flesh melts, so we turn it around the flesh and grill it slowly for about 30 to 50 minutes. By pouring water on it halfway through to lower the temperature, we can cook the thick parts evenly," says head chef Yamazaki Reo. He learned his skills at a famous eel restaurant in Kyushu and now works in the grill area. "At Unaju, we are particular about not only the freshly grilled eel, but also the freshly cooked rice, using polished rice delivered directly from farmers in Fukushima Prefecture. We also carefully select the ingredients for the sauce, and we have created a masterpiece that we are proud of," says Yamazaki. Freshly fried Edomae Tempura with a 100-year history
This long-established restaurant was founded in 1924, when the scars of the Great Kanto Earthquake were still visible, with the idea of "wanting people to eat piping hot food," and opened this spring at Marunouchi Oazo. That idea has been passed down to the present, the 100th anniversary of the establishment, and the restaurant is committed to "freshly fried" above all else. "We maintain the traditions we have inherited, such as gas stoves that allow us to fine-tune the heat while frying, and the mixture of batter and oil. The way we put the ingredients in the oil is also important, and it takes 10 years to make a single serving," says Hisashi Shimura of the headquarters. Tempura at Tsunahachi uses a specially made Tempura oil, so it is rich and fragrant, but has a light finish, allowing you to simply enjoy the deliciousness of the ingredients.


The restaurant also values the freshness of its ingredients, and serves seafood such as prawns and conger eels straight from the fish tank, and only the best seasonal vegetables are sourced from Toyosu. The restaurant also offers popular fried dishes, with the ice cream Tempura being a beloved original menu item. "We want to keep the core of the restaurant the same in our new store, but cater to our customers' needs by creating a menu that suits them. We hope that customers will enjoy the tradition of Edomae Tempura, along with the crackling sound of the tempura frying and the fragrant aroma that fills the restaurant," Shimura said.

Bar Español LA BODEGA

The relocation and opening of the first store weaves a new history into the future
"Bar Español LA BODEGA", which is known for its tapas and authentic paella made with seasonal vegetables delivered directly from the producers, is scheduled to open this spring. The "bodega" in the bar's name means a sake brewery, and the wines on offer are imported from Spain. The first store of this Spanish bar opened in Kokusai Bldg. in Marunouchi Area. For 19 years since then, it has been loved by nearby business people.

"Even though we were planning to close the restaurant due to the building's closure, we really wanted to keep it in the same location in Marunouchi," said Mitsuru Tanaka, the first Cuisine. In moving to Marunouchi Oazo, he said he wants to preserve the atmosphere of the first restaurant while also brushing it up. "We want to keep as much of Interior design as possible, such as the restaurant's iconic chandelier, as well as the menu and our particular touches, and maintain the retro atmosphere. We hope to create a lively and bustling restaurant, just like it is now."

Grilled Meat Torajji is known for its thickly cut Beef Tongue which is a specialty of the restaurant, as they believe that "cutting meat thicker allows the flavor of the ingredients to be conveyed more directly." Torajji has opened a Beef Tongue specialty restaurant, Tannosuke, in Marunouchi Oazo. A new menu item has also been created: Beef Tongue steak, which is prepared by purchasing a whole beef tongue for each restaurant and hand-cutting it while selecting the tastiest part.

"The slit-cut tongue is grilled over lava charcoal, giving it a crispy exterior and a crunchy interior. When you bite into it, the juices ooze out," explains Nagata Ikumi. Nagata, who took up her current position as a result of her love of Beef Tongue, came up with the idea to "serve the best Beef Tongue in Japan." After comparing beef tongues sourced from various countries, she chose one that was fatty, had no unpleasant odor, and still had the unique taste of tongue. This is the product of her proud delicacy.
