Theme of VOL.2: Working with Microorganisms. Fermentation Culture and How to Brew for a Sustainable Future
Taking the theme of "fermentation," which has long been rooted in the food cultures of countries around the world, as its theme, we will learn about the wisdom of our ancestors who have created rich foods in symbiosis with microorganisms, and consider how the concept of "fermentation" can be expanded to realize sustainable food.
